CANDY CAP MUSHROOM COOKIES

Candy Cap Mushrooms are a regular non-psychedelic mushroom which have a slightly nutty maple syrup flavor. I got them from San Francisco’s “Far West Fungi” shop in the Ferry Building and baked them into cute toadstool-themed cookies!

Here’s the Recipe!
Cookie Dough:
1/2 cup - dried candy cap mushrooms ground in a food processor
2 1/4 cup - all-purpose flour
1/2 tsp - baking powder
1/4 tsp - salt
3/4 cup - butter (room temp)
2/3 cup - brown sugar
1 egg
1 tsp - vanilla extract

Let the dough cool in the fridge for 30 min before rolling out
Roll out to 1/4” thick and cut out your shapes!
Bake for 12 minutes at 350F

Frosting:
1/3 cup - pure maple syrup
2 cups - powdered sugar
1/4 cup - pasteurized egg whites
pinch of cream of tartar

I didn’t have cookie cutters for all the sizes and varieties of mushrooms I wanted, so I just cut them out with a knife!

For the frosting and shapes I created 3 different types of mushrooms.

Fly Agaric Mushrooms (the cute red and white dotted ones), Morel Mushrooms (the yellow organic ones) and Enoki Mushrooms (the frilly shell like ones).
